The Holland is not a searing hot grill. Instead of a piece of meat with dark grill marks, you wait longer to get a piece of meat that is only slightly caramelized, but juicy and delicious.
It is also more versatile than your standard grill. You can bake and smoke with it, if you want to.
It does take patience, though. If you like messing with your food after it goes on the grill, it will never get done. You need the lid down, to keep the heat in, and you need to learn to time your cooking as opposed to always watching and flipping.
Ours is quite old, so the prices sure have gone up a lot. If ours broke, I might have a hard time justifying a new one, since we also have a Volcano and a Cobb.
