Intentional Leftovers
Sounds high falutin' doesn't it? I think I'll have to copyright that name before a tv chef makes off with it.
By intentional leftovers I'm referring to our practice of deliberately making vast quantities of a dish that we eat at both Thanksgiving and Christmas so that we only have to prep once at Thanksgiving then freeze the extra and reheat for Christmas. It makes for less stress in the middle of the Christmas marathon shopping and decorating.

Some of our ILs are
- collard greens with gratuitous amounts of bacon drippings
- stuffing (we make at least 7 lbs of it at Thanksgiving and freeze/reheat the extra for Christmas - tastes even better at Christmas because the flavor steeps)
- several pumpkin pies
- smoked hams
- lasagnes
- kale dishes, also with gratuitous amounts of bacon drippings
