brown up some Jimmy Dean sausage and mix it with cream cheese. Stuff the peppers, then drape a 2" piece of bacon over the top and secure with a toothpick. Bake until the peppers are soft.
I use Jimmy Dean because it has a finer texture than some other sausage. I use the same stuffing for mushroom caps.
You can also mix almost any kind of meat with the cream cheese... pulled pork, chopped up little smokies, etc. Also mix in some shredded cheddar cheese in the stuffing. Or some BBQ Rub.
No rules. Experiment. You'll find something you like.
