Pressure Cooker Recipes?

We had a healthy discussion on the virtues of pressure cookers, particularly the new electric multitaskers.

Now on to recipes. We do ragus and marinaras; corned beef and any tough roast. We particularly like a tough beef marinated in Dr Pepper with onion, celery, and carrots.

  • I developed this one on board our then sailboat, Andante. (We named our RV L'Andante after her.)

    Chicken Andante

    4 boneless, skinless chicken breasts

    Marinade:
    3/4 cup Harvey’s Bristol Creme
    1 Tbsp sugar
    1/2 tsp ginger
    1/4 tsp cinnamon
    1 tsp lemon juice

    1 Tbsp olive oil

    Mix marinade, add chicken, and marinade 15 minutes or longer.

    Heat olive oil in pressure cooker. Brown chicken breasts. Add marinade and pressure cook for 10 minutes after chuffling begins. Let pressure drop of own accord.

    Serve with Rice Florentine and salad.

    Shred any leftover chicken back into the sauce, refrigerate, and serve the next day as chicken in aspic.

    Can substitute port for Harvey’s Bristol Creme.
  • Chicken stew:

    Instead of beef, use chunks of raw chicken meat. Dredge it in flour, seasoned with salt and pepper. Brown it. Remove chicken. Deglaze bottom of pan with chicken broth. Add chicken back into PC with broth and browned bits, scraped from the bottom at deglazing. Add cut up carrots, celery, onion, potatoes, a bay leaf, a sprig of fresh thyme, or a tiny sprinkle of dried, Make sure there is enough broth and/or additional liquid, (preferably broth) to come up just to the top of the ingredients. Not over the top or it won't make a nice gravy. Cook under high pressure for 5 min. Release pressure naturally. Once you remove the lid, add some frozen peas and give it a stir. terry r.
  • Minute steak is an inexpensive cut that comes out tasty and tender in the pressure cooker. Sprinkle with dried chopped taragon, a dash of salt and pepper, and pressure cook for 15 minutes.
