- Shortie3ExplorerThis is our favorite way to bake a leg of lamb: Cut several branches of rosemary from garden; wash well & pat dry with paper towels. Line appropriate sized baking pan with rosemary: prepare leg by cutting holes all over leg and stuff with peeled garlic cloves. Season entire leg with granulated garlic, freshly ground black pepper and sea salt. Place a few branches of rosemary over the top; place in 300 degree oven and bake until lamb indicates it is 'rare' on thermometer. Remove from oven, cover with foil and let sit for 15 minutes. Lamb will continue to cook to about 'medium'; slice, place on platter, serve and enjoy!
We also like fried chops - heat EVOO in CI frying pan, throw in rosemary stripped from branches, or not, lots of peeled garlic, then place well seasoned (granulated garlic, freshly ground black pepper and few twists of sea salt) chops into hot oil, frying till done. If chops are real thick, I will place a lid on pan for few minutes to steam, then remove lid and let brown.
