Lime Chicken Vermicelli
I threw this together yesterday in an act of desperation. It was very popular. Total time from start to eat is about 15 minutes. Serves five normal people or two teen boys.
Lime Chicken Vermicelli
Olive oil
Vermicelli for five servings, broken into halves or thirds (depends on vermicelli length)
Chicken stock
2 large cans chicken breast
3 good squirts Real Lime
1 Tablespoon Mrs. Dash Lime Fiesta seasoning
2 Tablespoons capers
In a large saute pan, heat olive oil on medium high heat. Add vermicelli and stir to cover each piece with a bit of oil. Cook, stirring frequently, until vermicelli begins to turn slightly brown.
Add chicken stock to cover. Add more stock if necessary.
Pour chicken and liquid into a bowl. Using a pastry cutter, cut chicken until thoroughly shredded.
When vermicelli is just barely limp, add the chicken, Real Lime, and Mrs. Dash. Stir to mix thoroughly. Lower heat to medium and continue to cook until pasta is to your preference. Add the capers and heat another minute or two.
Spoon into five pasta bowls and top with shredded parmesan cheese.
