looking for electric skillet breakfast casserole recipe

Here is the issue: We camp with another family so there is anywhere from 9-11 people (adults and teenagers). If I was at home I would make the night before a breakfast casserole and put in the oven ...

We buy the frozen McCains breakfast hash brown mix, contains onions, peppers,ham,and hash browns, fry it up in the skillet and then just put the eggs on top arranged in sort of portion "piles".
