Camp cooking is going to kill me, with any luck. I'm just a big ole feller any way. I've lost back down to 243lbs,(6'1) but when we go out in the RV, we do it up right.
I'm a poor boy from NC that grew up about as poor as you can, and still live. I worked hard all my life to get where I am now, so camping food here we come.
I like to do king crab legs on the BBQ, along with bacon wrapped shrimp, stuffed with habenero cheese. Pizza on the grill, keep the dough in the fridge from before you leave til cook time. Stuffed burgers, I make a 50/50 burger that's ground bacon and beef, mixed and made into 1/2lb patties. I make'em bigger sometimes too. One of the best burgers you'll ever put in your mouth. We make fried chicken, chicken wings, baby back ribs, lamb shanks, lamb ribs, and a lot of other things I'm gonna save for another post.....
I even splurge with a lunchable on the trip to our destination. That's how bad I am.
If I had to, I'd be fine with grits, biscuits, cornbread, dry beans, collard greens, and all the rest of the southern food I grew up eating, which is not all good for you either.
I'm 58, retired, working on a second retirement, and I don't think it's right after all our years we have to watch EVERYTHING we eat. We have all earned that bowl of ice cream with a few crumbled up Oreos in it.
