Lunch Ideas?

What's on the camping menu for lunches? We tend to usually do boring 'deli meat' sandwiches.

  • Sloppy Joes, Taco salad, peaches and cottage cheese, fresh fruit with good cheddar and crackers.
  • AWWW come on "downtheroad".. You must not live in the Pacific NW....that "lunch" would cost you $60. at least!!!!!!!! :)
  • When it starts to get cool enough to have a fire throughout the day, we will use the pie iron and fix Manwiches using pieces of bread, the meat (cooked at home and frozen, thawed before lunch), cheese, etc. Spray the pieiron first with Pam, place bread on each side, close gently and cook over fire until warm.

    I also will use a Chef Boyardee pizza mix and cook them over the fire. YUMMY!

    I fix a "full meal" pasta salad with pasta, veggies and meats (pepperoni or ham). This keeps for several days, so we can make lots.

    We keep our leftovers and freeze them for lunch use later in the week.

    We do salads, chicken salad (chicken chunks, mayo, sour cream, etc.)
    tuna salad, etc. I will fix mac n cheese, and soups.

    I found a recipe for Olive Garden's Chicken and Gnocchi Soup that is delicious and very much a meal in itself.

    We occasionally do sandwiches, but those are very seldom.

    Just a few suggestions.
  • we rarely eat an actual meal at lunch. we might eat a sandwich, but more often, it's crackers or chips and fresh fruit...or jerky and chips..just something to take the edge off.
