When it starts to get cool enough to have a fire throughout the day, we will use the pie iron and fix Manwiches using pieces of bread, the meat (cooked at home and frozen, thawed before lunch), cheese, etc. Spray the pieiron first with Pam, place bread on each side, close gently and cook over fire until warm.
I also will use a Chef Boyardee pizza mix and cook them over the fire. YUMMY!
I fix a "full meal" pasta salad with pasta, veggies and meats (pepperoni or ham). This keeps for several days, so we can make lots.
We keep our leftovers and freeze them for lunch use later in the week.
We do salads, chicken salad (chicken chunks, mayo, sour cream, etc.)
tuna salad, etc. I will fix mac n cheese, and soups.
I found a recipe for Olive Garden's Chicken and Gnocchi Soup that is delicious and very much a meal in itself.
We occasionally do sandwiches, but those are very seldom.
Just a few suggestions.
Great ideas! What's the chicken/gnocchi soup recipe, please?

What is a "steamer"?
Steamers
What we love to have is from our beach that we catch or collect from our cages and traps.
Dungeness Crab
Manila Clams (Steamers)
Mediterranean mussels
Pacific Oysters - robsouthExplorer IIWhat is a "steamer"?
- K_CharlesExplorerTue the wife and I had 4lb of steamers, seafood chowder and Sam Adams. Charlie (our King Charles) ate the last 5 steamers.
- tonyandkarenExplorerToss the deli meat in a pan with a few sliced mushrooms, onions and green pepper strips, fry it all up, melt cheese on the top, slap it on your bread - boring no more!
- ramsgmExplorerShaved roast beef on a toasted hero, or fresh baked French Bread (you guys call them Grinders, or Hoagies, or some other such name)buttered with roasted garlic butter, then covered with horseradish dressing, crumbled blue cheese, and warmed, finally add ice cold lettuce, salt, and pepper to taste, and chow down. To make it truly spectacular you must use, bread made in Brooklyn, NY. Or make the bread yourself. Then sit back in your lounge chair, with a cold glass of Thai Tea and doze off for the afternoon.

- crimmps49ExplorerWe do "loaded nachos", tacos, taco salad, hot dogs wrapped in bacon w/toppings, pita pockets, subs, sloppy joes (pre-frozen from home)w/chips, cheese tray w/fruits and crackers, sometimes we eat leftovers.
- Jim_ShoeExplorerThe perfect blend of protein, carbs and fats for lunch:
Hot Dog on a bun, a bag of potato chips and a six pack of beer.
For a lighter lunch, skip the hot dog and potato chips.
