Meal Ideas

Stouffer's make some excellent things that do well in the microwave. We like their lasagna and their stuffed peppers. Add a bag of salad and some bread and you have a great meal in minutes. They also have chicken alfredo and chicken and dumplings that are good.

We usually stay at FB also and grilling is fine if you get back from
"touring" early enough, but we usually don't want to have to "cook" when we get. The Crock Pot is ideal. Let it cook while you're having fun!
The Pot roast is ideal. Through the chuck roast in with small amount of chicken broth. Put onions, carrots and potatoes with salt and pepper and your meal is ready when you get home.

Chicken with preferred spices and then cook instant rice and open can of green beans or desired side.

Meatloaf in crock. Then instant potatoes with another side.

Use your left over pot roast by chopping up the meat and making "beef stew". Just make corn bread and it is delicious.

If you're like me your freezer space is limited and you don't want to have to buy food in YNP so this way you can just fill freezer with your meats and your sides can stay in the pantry.

When we went to Yellowstone a few years ago we grilled out at Fishing Bridge. We also took the grill and fixings with us when we went sight seeing and found a nice picnic area in the area we were exlporing. Easy pizza, soft tortilla shells, pizza fixings. Everyone makes there own pizza, place on a piece of foil and grill on low for about 5 minutes or the tortilla shell is crispy. Love Yellowstone!

We have a big bucket list trip coming up, we are getting into the RV and not comeing back until we are either broke or can't stand eachother any more. So I have been collecting recipes for the trip so I won't have to worry about cooking. Ours have to be vegan, but I'm sure you can come up with meals that your family likes, double the recipe, freeze half for your trip. Also if you have kids, hobo meals are both fun and filling and EVERYthing tastes better cooked on a campfire, on a stick

We grilled at Fishing Bridge. You just have to put the grill up every night. That being said there are a lot of options for cooking inside. I usually just look at the regular food we cook at home. It is has a meat or anything that can be precooked and frozen I do that. For example I will brown meat ahead and freeze in the seal a meal packets. They are smaller and fit well in the limited freezer space. If I have room to make chili ahead and freeze it I will, but if I'm limited I will only brown the meat and put everything in the crockpot in the morning. Again, just look at what you normally cook at home. With a little preplanning you can do that same in the RV.

We bought sausage from the campground store and grilled over fire. Pancakes and eggs for dinner. Same thing as you, trying to keep it simple to maximize time in the park. We did hot or cold cereal for breakfast and kept sandwich supplies in the truck for picnic lunches. Grand Teton has some nice picnic locations on the water with mountain views. I couldn't give you specifics but it was on the north end of the park, on the right as you head south. Multiple picnic areas. Pulled out the lawn chairs and ate PB&J or Ham Sandwiches but one of our favorite memories of the trip because of the view. Hour drive tops from Fishing Bridge if I recall correctly.

These are some of the pre made or partially made dishes I've made for this year's 3 week tenting trip:

gumbo base: everything is in it but the shrimp which will be placed in the dish a few minutes before the base is completed heated. The rice for all dishes is already frozen and ziplocked.

Texas red chili. You can add beans if you want to bulk it up.

Chinese BBQ pork, pre sliced and vacuum packed. Serve it atop a salad, over rice w/ veggies as a main course or in a Chinese style soup. Or just add the meat to fried rice.

Shredded pork is nice on a toasted bun or served over broad noodles w/ peas or the vegetable(s) of your choice.

Latin style roast pork. This year that meat will go in a Cuban sandwich that'll be pressed in a waffle iron or weighted by a CI pan. Cutting down on bread consumption? Put it in a lettuce cup.

Curry base. I made it with lamb and will add spinach on site. It'll be served with a cucumber riata, chutney and naan.

Italian beef is vacuum packed and can be served in a sandwich w/ peppers and onions or placed atop your fav salad greens a main course salad.

Lasagna, stuffed manicotta, meat sauce which has limited spicing so it can become Italian or Mex-Tex w/ ease.

Almost all my chicken has been deboned and flattened so it'll cook faster and evenly. It can become chicken fingers, shawarma, picatta/marsala, stir fried, or fajitas.

When chicken quarters go on sale this way I tend to buy 10 lbs. I debone 'em (YouTube is your friend if you don't know how to do it) and the bones become stock/broth that I also freeze.

Your imagination and on hand seasonings is the only limitations.
