I've been doing a lot of "slow cooking" of late and often need a temperature in the range of 200-250 degrees and yes, you are right, there is no way to program that temperature directly. So I set the oven at a higher temp and using a digital probe thermometer plus open and shut the door method to adjust the temperature. Be nice to not go through all those gyrations.
