Mini loaf breads from cake mixes

I am thinking of making some mini loaf breads for my co-workers for Christmas (there are 20 of them). I have seen some recipes for making loaves like banana nut and poppy seed from cake mixes.

Wondering if any of you have recipes to share and also how many mini loaves can I get from one box of cake mix adding extra ingredients?

  • I didn't realize this has been discussed before...I have worked with these folks for many years, and someone is always bringing food to the office. I know they would not throw anything away!
  • I have no experience with using box mixes for mini loaves or gift giving.
    Re the second poster, while i think you're generally correct, the recipient can always serve it to inevitable holiday company, it's helpful to have a little something in the freezer for when someone drops in. or the gift giver can simply put the 20 loaves, individually wrapped, on a platter in the break room for colleagues to admire and take if their diet allows.
    BUT, it's so easy to mix up from-scratch batters, really not much more time than a box mix, so why not gift someone with something truly homemade? for the best recipes and those "guaranteed", visit King Arthur Flour's web site.
  • We had this topic come up on one of my other forums last year. I'll tell you what the majority opinion was on homemade gifts of food. Many people do not want them, it goes right in the trash. People felt that if it was a casual acquaintance, they couldn't be sure about the cleanliness of the kitchen, nor the ingredients. Many people have various allergies and dietary restrictions.
    I'm just passing on some information dealing with this subject. It may be worth thinking about, before you go to the trouble and expense of making gifts of food.
