Great topic and one I've been thinking on as I get closer to our multi year RV trip.
Like others I let my menu determine what appliances are coming with us when we tent camp. The 2 that are constants are the coffeemaker(still working on the easiest way to make that. Sigh) and a manual blender.
Tried taking a fire pit waffle maker and pie irons but decided it added to the overall weight and it was easier to just make and freeze food stuff like toaster pastries and waffles at home to heat up/bake over a fire pit.
I'm working on a way to have it all when we RV that depends on industry credentials, costs and accessibility: rent hourly space in commercial kitchens on the road. Means I can cook and freeze at intervals w/o dragging a lot of stuff with us.
Should that not work out in all probability I'll just bring a Vitamix or immersion blender. And maybe a mini food processor.
