For rough, as-cast Dutch ovens and fry pans, I have used an angle grinder with a medium grit flap wheel to smooth the cooking surfaces of the cookware. Then clean thoroughly, and season several layers with lard or crisco, or your own favorite blend. Works amazingly well. This would also work well with very pitted rusty items.
