Navy Bean Soup

1 lb of dried navy beans
32 oz of chicken stock
1 lb of smoked sausage or smoked hamhocks, cut in chunks
1 large onion peeled but not cut
4-6 whole cloves
1 tsp of ginger

Pick and clean the beans of any stones or debris. Soak an hour in warm water. Drain.

Insert the whole cloves into the onion.

Combine all of the above in a slow cooker and cook on high for 4-5 hours.
  • Just made the almost exact recipe in the instapot. 45 minutes under pressure and slow release for about the same. (I soaked overnight) Turned out great.
  • I chop carrots, celery and onion. Sauté. Some garlic powder, a tea bag with herbs de Provence and a few bay leaves. Can of diced tomatoes and a few handfuls of kale and do them in my electric pressure cooker 15 minutes.
  • Nothing beats a stock made with a whole onion pierced with cloves. So simple and so good.

    Best part of these bean recipes is they can be made ahead of time and frozen to take on trips for a quick and tasty meal from the microwave.
  • Magnus, do you have a recipe for white beans and ham hawk? My mother made a great white beans and ham hawk but she's just turned 94 and says she doesn't remember how to make it any more?

    Bill, I’m pretty sure she means “ham hock”. You can get smoked ham hocks in the meat section of your local grocery. I’ve never seen them at Walmart. The recipe I gave in the beginning of this thread is the standard recipe for white beans/navy beans. Just use two ham hocks instead if the smoked sausage and you’ll be good to go. If you don’t have the ginger just leave it out. The cloves can be left out too but I think it just tastes incomplete without them.
