Need dessert help

We are planning to attend a B rally on our way home from a two week trip. On one evening the pot luck meal is broken down according to the initial letter of your last name. As luck would have it we are in the dessert category. DW is a great cook and her desserts are seldom out matched. Our B has a micro wave and that's it. We will have our BBQ grill and electric griddle. Any novel, easy suggestions?
  • Here's one my Mom used to make for large gatherings. No baking at all. Serves 12 - 15.

    1 pkg chocolate cookies
    3T melted butter or margarine
    1 pkg lime Jello
    1/2 cup hot water
    1/4 cup lemon juice
    1/2 cup sugar
    1 lg can Carnation evaporated milk
    1 T lemon rind or 1/2 t lemon extract

    Crush cookies and mix with melted butter. Keep out one cup and pat the remainder into the bottom of a 9x13 pan. Chill in refrigerator while you add hot water to Jello and sugar and dissolve. Add lemon juice and a little green food color (if desired). Add lemon rind or extract. Refrigerate until thickened. Whip Carnation milk until stiff, then add jello mixture. Pour into pan over cookie crumbs and sprinkle the one cup of reserved crumbs over the top. Chill. Can be served with whipped cream.

    PS I have no idea why, but she called this Lime Frozen Pie even though it wasn't pie and it wasn't frozen.
  • 1- Oreo ready made pie crust
    1- 8oz cream cheese
    1- 8oz Cool Whip
    1- 1/3 cup sugar

    Mix softened cream cheese and the 1/3 cup of sugar. Fold in Cool Whip. Scoop into pie crust and refrigerate.
  • There's a recipe for 5 minute microwaved fudge (my kids love it). You could make a refrigerator type dessert....Pistachio fluff or a fruit pizza which only requires baking the pizza crust, very carefully on a low flame BBQ grill :) and a yogurt based "sauce" then cut up fruit as the "toppings".
