Pumpkin ideas wanted (non-dessert)

Does anyone have any good canned pumpkin recipes/ideas, aside from pumpkin pie/cake/muffins etc.? I'm an "almost vegetarian" (no beef or pork, minimal chicken/turkey, and fish) wanting to add some more "diversity" to my diet. I love any dessert with pumpkin, but would like to use it in a main or side dish,snack or any other tasty ways (that my more carnivorous spouse might like as well!)

So what ways do you enjoy pumpkin besides your holiday pie?

  • Thanks to all for their ideas so far. Pumpkin chili sounds intriguing, that's one ingredient I wouldn't have thought to put in chili! We enjoy pancakes, so will have to give that a try as well. And maybe some of those fresh pumpkin ideas too. It all sounds good, especially this time of year!

  • Just remembered seeing a recipe for mashed pumpkin made to take the place of mashed potatoes. I think the recipe which I read had butter and a beaten egg in it. Was than piled in serving side piles on a cookie tray and baked in an oven. I saved the recipe for several years and than tossed it.
  • I have been wondering how pumpkin french fries would taste. Not wondering enough to make them but enough to think about it. It would take a fresh pumpkin of course.
  • Pumpkin puree doesn't really have much flavor, but it does have a lot of nutrients and fiber. I put it in cakes, spaghetti sauce, soups, yogurt, milkshakes, smoothies. If you don't tell, they won't know!

    Pumpkin soup in the islands is made from calabeza which can be confusing since it's called "pumpkin" in the English speaking parts of the Caribbean. Can't find it at your local ethnic market? My first substitution would be butternut squash since it's texture is closer to calabeza than American pumpkin but 2nd choice would certainly be American pumpkin. Anyway you do it it's yummy!

    You can find sweet recipes or spicy recipes, depending on your taste. My first encounter was in Jamaica - it was spicy and oh so wonderful...
  • Diced and frozen pumpkin is not only more easily saved, but it tastes better and is better for you. Pumpkin is so low acid a vegetable that you lose tons of nutrition by canning.

    So buy yourself a pumpkin or orange squash, slice, peel dice to 1/2 to 2/3 of an inch squares.

    Now. Pumpkin Cheese Bake

    Take olive oil and cover casserole dish.
    2 cups diced pumpkin
    2 cups stewed tomatoes
    -2 cups milk
    -2 extra large eggs
    -Seasoning to taste, ie. pepper, paprika, or....
    Beat above 3 ingredients together and pour over pumpkin and tomato.
    Take 2 cups rolled oats and cover the entire casserole
    Grate some old cheddar cheese and cover the above. Amount varies by your taste. Me. I lean on the 2 cups, again.
    Dot with butter, (I use unsalted butter)

    This is a bit shy for a 2 quart casserole dish, so I sometimes up the amounts of each major ingredient. Bake 45 minutes to an hour at medium oven, ie. 325 to 350'F.

    At this time of the year, after each serving, I put out in the porch on top of the freezer. It can also be refrigerated.
