Sometimes we make extra baked potatoes to use for breakfast. Slicing them in half I'll put it flat side down in a skillet of melted butter (one potato per person). When the flat sides are golden I remove them from the pan and plate them with a sprinkle of Greek seasoning. Next fry up one egg per person using the butter in the skillet and a dash of olive oil. Place egg on top of the potato. If you have a fresh tomato put a slice on top of the egg. The whole dish takes about ten minutes.
Simple is always best for us. Don't forget about leftover pizza. Leftover meatloaf. Or a leftover porkchop. Reheated meatloaf or porkchop a perk up with a heaping spoon of applesauce on top.
