My go-to breakfast bake is the last morning of the trip favorite as it can be prepared ahead of time, can include leftovers and only needs to be heated up. And there's no babysitting it, watching for the eggs to set.
Just layer in a greased pan:
Hashbrowns (cooked or not)
Cooked sausage or ham
Veggies
Sliced cheese (key ingredient to holding it all together)
Already scrambled eggs
Shredded cheddar cheese
Diced tomatoes
Bake until heated through and cheese is melted. I use the dehydrated hash browns, re-hydrated, for convenience. If adding fresh spinach, shred it first, or the cheese slices won't melt the breakfast bake together well enough. Substitute the veggies and meat for anything leftover. This recipe makes gluten-sensitive folks happy too.
