We found the basket makes everything in and out very manageable.
Mine is several years old and the basket sets too low for everything to cook well on the bottom. This was a common complaint and most people have raised the basket 2 1/2-3". I put a springform pan in the bottom of mine, less the bottom of course.
This was such a common complaint I thought maybe they had added some height to the to basket by now.
Oh...sorry this is our first experience so can't comment on older models.
By "everything" are you referring to have something like potatoes underneath the bird (or whatever you are cooking)?
With that the bottom of the bird cooked fine...nice and brown all over.
