One pot meals do need some planning, as the ingrediants need to be compatible with each other in regards to the cooking method.
Obviously, there's single ingredient meals too, like hamburgers, or a big batch of taco meat or fajita chicken. Make up several pounds, portion and freeze, then its just a reheat. Taco and fajita take a lot of condiments though, not always easy in an rv.
I like no-pot meals, like sausage, steak or chicken on the grill and a potato in the microwave... ok so I do cook a few things with the nuker :)
Cheaper cuts of steak can be bought a few lbs at a time, tenderized and marinaded, and then portioned and frozen.
Sometimes I wish I had an oven, mostly during winter camping... roasting in the crock just isn't the same, and I haven't tried cooking any sort of bread in the crock.
