What you need to do is search for "skillet meals." These often have a modest amount of meat, extended with vegetables, rice, or pasta. One of these plus a nice salad is a great meal. Many of the recipes will make way too much for one person, so cut it in half. Or make the whole thing and freeze half of it for a few weeks later.
You can often use ground beef, ground turkey, or canned chunk chicken.
Make a couple of these meals and you can eat well for a week. Don't sabotage yourself living on junk food.
