I have to agree, one pot meals are RV friendly for sure. How about nuking a potato and then adding sour cream, butter, bacon bits, cheese, broccoli.
If you ever have a fire, hobo meals are fun, just get some heavy foil, those pre made hamburger patty, and add cut up veggies, salt, pepper and garlic salt. I also do it with kielbasa, onion, mushrooms, zucchini, red pepper, or just the veggie that you like.

Go to Costco and get a cooked chicken, you can make a few meals with one chicken. Legs and Thighs for 2 meals. The breast can be used for Chicken Sandwich (Hot with canned gravy) or cold with Mayo and lettuce and if I have it cranberry sauce. If your really ambitions, take the left over bones, boil them in some water and add some tiny noodles and you have cheap chicken soup.
Also, also have you checked out the deli department in large grocery stores. Our Safeway (Vons) has great soups, salads, chicken, asian food
Another thing we often buy, is in the frozen section they have cooked hot wings, and you just nuke them. Serve with carrot and celery sticks
I make my own street tacos. I get a can of black beans, heat it up and season with cumin and chili powder, salt and pepper. Then in a corn tortilla I put some of the beans, and then lettuce, onion, chopped tomato.
