Another possibility. Been making variations on this dish since I was a teen courtesy of "Abuelita", the much loved by all, Cuban grandmother, of my BGF (her homemade fried doughnuts were also much loved). I make this so often I no longer follow any recipe but found one that gives the basics. Easy enough to scale down to 2 servings by halving the amt of rice and liquid used but NOT the other ingredients. I use whatever green olives I've on hand and find this dish to be a better use for chicken wings instead of breasts or thighs. And if I've neither the seasonings to make yellow rice or the pre-packaged version on hand I just use long grain white rice and Goya tomato sauce and/or beer as the liquid.
Arroz con PolloYou can make this in one pot by browning the chicken, followed by sauteeing the inions, peppers and garlic next. Add rice, then liquid, and you are good to go in another 20-25 minutes.
