Just posted this to another thread, but thought you might like it too -- it's one of my hubby's faves! Takes very little prep, uses a single pan and is finished in less than an hour. Pretty healthy, too. Approx. 4 grams fat / 200 calories per 1.5 cup serving. Hearty and delicious.
WHITE BEANS WITH SAUSAGE & SPINACH
3/4 pound turkey kielbasa, sliced
2 cups low-sodium chicken broth
2 teaspoons garlic powder
2 teaspoons dried Italian seasoning
2 cans Cannellini beans
1 large tomato, diced
6 oz. bag baby spinach leaves
Freshly cracked pepper to taste
In large skillet, cook kielbasa until nicely browned. Remove from pan and set aside. Return empty pan to stove and add next five ingredients. Simmer for about 30 minutes. Add spinach, pepper and browned kielbasa, then continue cooking until heated through (10-15 minutes). Top with grated Parmesan, if desired.
