A couple of weeks ago, I made "fried" chicken in my smoker at 250* I'm sure it would work in the oven.. I like doing it on the rack, because there's less contact then in a baking dish, so less mushiness.

The only thing I would do differently next time is use bread crumbs instead of cornmeal.. It was a bit gritty, but still tasted great.
