Looking ahead, peach season will be here in the farmers' markets. We want to go beyond peach cobbler and have a few recipes that are simple, stove top prep or no-cooking-required. Ideas?

That sounds like a great addition to the bacon-centric menu. Just remember that if you are not canning the peaches you can cut back a lot (up to 2-1/2 cups!) on the sugar.
I wish it was peach season on my end already but won't happen until about July. So I'm just concentrating on asparagus for make ahead dishes for the minute.
Another no cook peach dish: smoothies! Great for breakfast, a nice refresher for lunch.
