Peasant Chicken

I don't know why I call this Peasant Chicken, other than it is very few ingredients and so easy.

2 chicken breast halves or 4 chicken thighs
6-8 cloves garlic, chopped (yes, you need that much!)
1 small-medium onion, chopped
1 can diced tomatoes
1 can cannolini beans, drained and rinsed
salt, pepper

Sautee garlic and onion in olive oil , add chicken. Add tomatoes (undrained) and beans.
Simmer for at least an hour for flavors to meld.
Serve over pasta of your choice, with LOTS of parmesan and fresh ground pepper.
You'll be tempted to add other spices, but don't! The garlic does it all.
Serves 2.

    Thanks for posting this easy recipe. Think I will try it using 1 breast half and 2 thighs. I like SWMO's idea of using different varieties of diced tomatoes.

    I have a small crock pot I take in our B and might try it in that. Won't have the heat build up from the burners and easy clean up if I use the liners.

  • That does look good and I suppose one could play with the varieties of diced tomatoes to get a subtle change if they wanted.
  • What a lovely reading chicken dish. I really like the addition of beans cuz they make a nice change of texture. Bet with tomatoes being in season now it'd be nice to add some fresh ones:).
  • I could only add brine the poultry the night before cooking. Makes a huge difference in the finished result
