Poblano peppers are rich & flavorful with a mild to medium heat....not sweet like a bell pepper.
The skins should be removed as they are thick & waxy (lightly roast then sweat them in a plastic bag---skins will peel off)
They are typically stuffed with cheese etc, coated and fried---chile relleno
When dried they are call ancho chili
Sweet (from pineapple) and spicy (from poblano) might make a tasty combo
