Potato Noodles?

Have a friend who is diabetic and still loves pasta. Potatoes don't cause the bg spikes that wheat flour does so he's hoping to switch to a potato pasta if it's palatable (alliteration intentional).:W

Does anyone here have a tried and true potato noodle recipe I can send him? He's done a search on the 'net but wants something that people actually make and eat regularly.

He does have a spaetzle grater as well as a pasta machine.

  • He's not into 1/3 cup portions. He's Italian and proud of it. Rice and wheat both are causing bg spikes for him. Potatoes do not cause his bg spikes. I don't know why, docs don't know why but all agree that when he eats rice and wheat (even whole wheat) it's trouble.

    So he hopes to switch to potato based pasta.
  • i have type 2 and i make whole wheat pasta regularly.if your friend keeps his portions to around 1/3 cup he'll be fine,but he probably knows this if he has type 2.potatos are very high in carbs and not good for type 2.
  • I am not sure how rice acts for a diabetic but rice noodles are a good substitute for traditonial wheat pasta.
