We use a rub from Robert Irvine on the Food Network. Put the rub on the meat, marinade it for at least a few hours. Overnight is better. We typically are using a pound of pork roast, but the rub can be varied as needed. Put it in the slow cooker with a cup and half of water on low for 8 hours. Break it apart and add your favorite BBQ sauce and cook for 1-2 more hours. Very simple and VERY good. You can vary the heat factor by what type of BBQ sauce you use.
You can experiment with different rub combinations. We've found throwing your own together is far better than buying a premixed one.
