- PGR_SkyeExplorerHere is my favorite quick bread recipe, but its not with blueberries.
Hawaiian Pineapple Banana Bread
3 cups flour
2 cups sugar
1 t. baking soda
1 t. cinnamon
3/4 t. salt
1 cup chopped pecans
3 eggs, beaten
1 cup vegetable oil
2 cups mashed bananas (about 5)
2 t. vanilla extract
1 8 oz. can crushed pineapple, drained
Preheat oven to 350 degrees F. Combine dry ingredients in a large bowl. Stir in nuts. Combine wet ingredients in another bowl. Mix wet ingredients into the bowl of the dry ingredients. Mix just until all is moistened. Put into two greased and floured regular (8.5") loaf pans.
Bake for 1 1/2 hours at 350 degrees. Cool in the pans for 10-15 minutes then turn out onto a rack and cool completely. Makes two loaves.

- Go_DogsExplorerA little OT. I have been cheating and buying Quick Bread mixes at Aldi's. I substitute ingredients. I use canned pumpkin, or applesauce, or cranberry sauce for the oil. Fruit juice, or coffee, or milk for the water. I add extra spices, (cinnamon, nutmet,cocoa, tumeric,orange/lemon zest, etc) and nuts, chocolate chips,frozen blueberries, etc. Egg whites for the whole eggs.
I have a cast iron loaf pan, it makes a great quick bread.
I never make the same one, twice! - bobsallyhExplorer IIAunt Jemimah Coffee Cake Mix. We used to make these quite frequently when we had our tent camper years ago. Started looking again for the kit last year. They are on Amazon at some ridiculous price and we passed. Were in Las Vegas and went to Glaziers' Market. They carry a lot of products from the East/Midwest areas for all the folks who relocated that now call Sin City home. Sure enough, there was Aunt Jemimah. We bought all they had on the shelf. Doesn't make a whole lot but no mess as everything including the pan is in the box.

Krusteaz quick breads are very good.
