The Food Editor of our local paper always publishes her favorite recipes that have appeared in the paper the past year. In December this Quick and Easy Chili was one of those choices. I have made it twice, it is really quick and simple.
1 lb. browned ground chicken or lean ground beef, I think you could also use turkey.
1 10 oz. can Ro-Tel tomatoes and green chiles
1 15 oz. can Ranch Style beans
1 10.75 can Campbell's Minestrone Soup, plus 1 can of water
Mix browned and drained meat of choice with Ro-Tel, beans, soup, and 1 soup can of water and heat thoroughly. Eat either plain or over brown rice (boiling packets).
To change it a bit, add some boiled pasta and top with cheese.

Honey Cornbread. Just dump dry mix in bowl, add milk, eggs, and oil, and bake. Since you don't have an oven, you could do that in the oven at home and keep in the fridge.
