Cook some rice, or bring some cooked with you, any kind you like will work. Chop an onion, put it in a skillet with some breakfast sausage. (For one, you could use half for this and save half for a breakfast meal, or lunch.)
Brown the sausage and onion, dump in a bag, or partial bag of slaw mix, (for one, you could use half a bag, but it really cooks down). Cook until nearly done, and throw in the cooked rice. Make sure everything is good and hot and enjoy.
With any ingredients you have left, you now can make some slaw. You can eat sausage and eggs for breakfast, or make a patty out of it, and have a sandwich for lunch or both.
You can also use other cooked grains, such as barley, wheat berries, or quinoa. I imagine hash brown shreds would work well, also. You could probably cook them with sausage and onions, instead of the grain. terry r.
