Another vote for the vacuum sealer! We vacuum seal everything we can before a camping trip, prevents any leaks and messes in the cooler.
Here's an idea: before a trip, buy a large beef roast (or pork roast) and cook it til it shreds easily. You could pressure cook it or do it in a crock pot with whatever seasonings you prefer. Package into individual meal-sized bags, fold the tops over, freeze overnight then vacuum seal the next morning. Save the drippings to make gravy.
Shredded beef and gravy over instant mashed potatoes.
Shredded beef tacos/fajitas
Shredded beef sandwich
Shredded beef in your chili
(we can our own venison and use it the same ways)
You could also pre-grill chicken breast and do the same. Or add to a box mix of Chicken Helper or Pasta Roni. Tuna Helper is also better than it sounds and doesn't need refrigeration! Does require milk and butter though.
I would think that the vacuum sealing would help make things last a few days longer too, since they're not exposed to air. Plus the flat bags stack easily in the fridge. If you have room for an ice chest, you could keep the items in ice to help keep them frozen a little longer.
We have a little Weber Smokey Joe charcoal grill and a campfire grate that we take camping. All meat, potatoes and veggies can be cooked on the grill or open fire.
