Raw, uncooked pasta sauce

One grated small zucchini
2 tbsp grated red onion
1/2 cup rough chopped chard, stems removed
2 tbsp fresh oregano
1/2 cup chopped fresh parsley
2 tbsp chopped fresh mint
1 tbsp chopped sun dried toms in olive oil
3 large fresh tomatoes, chopped
4 tbsp extra light olive oil
8 pitted kalamata olives, chopped
1/4 tsp salt
1 tsp sugar
1/2 cup torn fresh basil leafs
1 tsp capers, chopped

Made this tonight served over past shells with grated pecorino on top.

Good, but not up to our usual high standards. It was deemed weighed and found wanting:

Less parsley
More salt or add anchovie
More mint
Add red pepper flakes
Less basil (per DW...... I disagree)

    Tried this again today and it was not so good. Too many ingredients. Onion, oregano and sun dried toms will be deleted next time.

    We've been making brad, muffins and freezing. Might be time for some pickles, but that's another category that is getting overloaded.
    We haven't made any sliced dills and I'm thinking maybe some sliced zucchini dills might be good?
