I want to bake a breakfast casserole on Wednesday morning at the house, put it in the Yeti cooler and reheat it on Friday morning in the RV. The reason I don't want to bake it in the RV is that it takes so long. I just want to be able to reheat it in the RV oven. What do you think? Is it doable?

I think so. If you are going to reheat it in the oven, I would underbake it a bit so it does not dry out in the oven.If you are going to nuke it, then fully cook it. Maybe in individual portions?

Before microwaves, people reheated food like this all the time. Just use a low heat setting (around 200).

Tripalot, Just pick one that fits your favorite ingredients. I personally like those with a shredded potato (hash browns) base. I usually make one for Christmas morning and even a large one doesn't last very long as leftovers.

Thanks for the websites re breakfast casseroles. I am anxious to try out a few before the holidays - so many to choose from.

Go to allrecipes.com and type in breakfast casserole in the search box. You will get many many recipes. I use that site daily. You can also search by ingredients and it will bring recipes up that contain those ingredients. Great for using up leftovers or little dabs of things you have left.

Somewhere in my travels I picked up a Bisquick cookbook which has many good breakfast casserole recipes. I see that there is even more available on the website. See if this link will work for you. I'm a member so I don't know if you'll get in. Let me know.

I remember from the days before microwaves... Any cooked food - like a casserole - can be reheated from the fridge at 300* for 30 minutes. I still use that rule often. :)

I have never made a breakfast casserole. Would you be willing to share your favorite recipe. Something like that would be perfect for Christmas morning - especially if it can be done ahead of time. I will be cooking for 6 adults and 2 kids with an appetite.

I make breakfast casseroles and they heat up beautifully in the microwave. I reheat them in individual serving size. The taste does not suffer at all.
