The wife just found an Eggs Benedict casserole recipe on the internet that we are going to try this weekend. Don't have the link but google will turn it up.

Later in the day it gets up high, but the mornings are the best time to be out unless your in the water. I like to cook breakfast and dinners outside to help keep our Rv cooler. Lunch is easy non heated things. Breakfast and dinner time is not as hot outside. Our family really likes the outdoors. The inside of the Rv is really only used for sleeping and bad weather. It just makes sense to me to keep the cooking heat outside and enjoy the outdoors with our family/friends. I know that's not everyone's thing...

Breakfast Eggs in Foil Bowls are one of our favorite over the grill camping breakfasts. It's great with a group as each person can customize their own bowl to suit their taste. Easy clean up, too.

I don't do well in the heat, so if it were 100° I'd probably be eating cold bagel sandwiches (with ham, cream cheese & veggies), cereal or yogurt with fruit. I'm acclimated to the Pacific Northwest where 100° is pretty much unheard of. :p

I buy pre cooked pork carnita's at Costco and a package of frozen onion, green and red peppers at Trader Joe's to make carnita's breakfast burritos. We usually have carnita's the night before and the next morning I make breakfast burritos with the left over meat. I do not microwave the pork as package directions. I spray a little oil in a pan and cook the pork carnita's in a skillet.
I sauté the onion, peppers and pork together, add scrambled eggs to the mixture. Serve with shredded cheese and salsa on the side. Everyone makes their own burrito.
