Same here. Store rotisserie chickens make great economical travel food.
Herself will also make chicken and dumplings. She boils the carcass, picks the meat, throws out the skin and bones. While picking the meat, carrots and celery are low boiling in the pot broth.
Meat goes back in broth. Broth brought to rapid boil. Drop in Mary Bs frozen biscuits, 8 or 9 should do it. Bring up to boiling again.
Lid goes on, heat lowered to low medium and broth at slow boil. Leave the lid on, no peeking. Did I mention to leave the lid on? Point made.
After 20 minutes dish up that tasty stuff and consume several bowls. Especially good in winter.
