Sounds like our place; make most all of those.
I usually take everything left over after de-boning and make chicken stock. Ends up in soups and base for roux.
another favorite here is :
Rice “Dry Soup”
2 cups rice
2 T oil
2 small onions, chopped
2 cloves garlic (optional)
2 cans diced Mexican tomatoes
4 cups chicken broth
Jalapeno peppers to taste (about 2 T)
1 ½ cups cooked diced chicken
In frying pan, brown rice in oil. Add onions and garlic and cook for 2-3 minutes. Add broth, chicken, and jalapeno peppers. Simmer 25-30 minutes, until liquid is absorbed. (Rice should be done) Serve with sour cream and grated cheddar cheese. Can roll in a tortilla shell for chicken and rice burrito.
This makes a lot. For two, easily cut the recipe in half and it will still be plenty.

There are so many uses for the leftovers. We usually get 3 meals from 1 rotisserie chicken.
