Thanks 67, the clean one is new. That may of been the second time I used it. Its my first electric smoker and I destroyed a few good pieces of meat learning how to use it. It cooks much different then lump or wood. I have it under control now. With the electric its a matter of cooking it to 125 degrees then wrapping it tightly in foil and cook it like that until it reaches the desired temp. This locks the moisture in.
I'm going to hold off on the smoker today but I think Ill be digging this thread back up over the winter when I have time to play with it.
