I can keep mine around 240 with a ring of fire, 3 stack, for about 4-5 hours. It does depend on the ambient and how much charcoal is in the stack and it will peak around 275 and drop to 220 over the time period though.. This is also with the short barrel and I don't know how the regular one would work out, but I'm sure the temperature would be lower due to the increase in surface area exposed to air. This is something any un-insulated smoker will have to deal with. My temperature is via a Maverick and taken at the grate. I really haven't checked it dry with clay over the fire, but I think it would be too high with the ring of fire setup.
