Smoking meat is easy, but i agree with Dave, you have to monitor it. It's basically all about the amount of the right smoke and maintaining the right temperature for the time needed. later you'll find some meats do better with a foil wrap at a specific point, some need a different finish temp, the right wood for the right amount of time, and the list goes on, but any need to rush is virtually non existent. Most time frames in smoking are relatively broad.
