I think sous vide cooking is a perfect match for camping.
We use it camping more than we do at home. At home just the two of us eat at a certain time and it's no big deal to cook a simple meal.
Camping and tailgating I am cooking for 6-10 people and Often the timing is hit or miss.
SV lets me prep 10 hamburgers early in the day, put them in the pot, cook for 4 or 6 hours and when everybody is ready to eat I turn out perfectly cooked juicy burgers in a few minutes.
Why are people negative about something they have never tried?
