Spaghetti with Lemon Sauce.....
......aka Spaghetti al Limone
4 Servings
1 lb spaghetti
1 clove garlic, for rubbing only
2 lemons juiced and use 1 lemon for zest
5 tbsp olive oil
1 cup of grated Parmigiano cheese (save some for later)
1 bunch fresh, flat leaf parsley, chopped or torn
Start the spaghetti.....
Cut garlic in half and rub interior of serving bowl, toss garlic away
Add lemon juice and olive oil into bowl, whisking to an emulsion. Mix in 2/3 of your grated cheese.
Drain pasta and add into bowl. Mix well. Add remaining cheese, lemon zest and parsley. Add salt if needed.

PS: I only use juice of one lemon
