Stripolean & Country Ham

Could someone tell me what stripolean is. A lady was making a mess of beans and they looked so good but I dont know what stripolean is. Also what is country ham. She was frying up some cabbage, something I've never tried, and added country ham with directions to boil the han first to get the salt out. Thanks in advance.

    Okay, well Streak o' Lean is kind of the opposite of bacon. Where bacon is smoked and has a streak of fat among the lean meat, streak o' lean is salt cured and has a streak of lean among the fat. Yes, that's right, streak o' lean is salt pork.
  • We called it streak o lean and country ham in the south here. Nothing better in a biscuit.
  • DW says it probably was schnipple beans, aka sweet/sour green beans. An old German dish.
  • Oh my, I grew up on fried cabbage with ham or bacon thrown in. It's the only way I eat cabbage. Fry it in bacon grease and life will never be the same again.

    Cracker Barrel's serve country ham. They also use country ham to season their turnip greens and pinto beans.
