I have been doing chickens that way for 20 years and never thought to do a turkey that way and I have never seen, heard, or spoken the word Spatchcocked.
Any idea where the tern comes from.

Spatchcock wiki This is the recipe we use. The skin comes out so crispy and the breast and dark meat cook correctly. White meat gets devoured and the dark meat goes into turkey pot pies for Friday!!! :-)
