It is where we are going again this year. Only down side. No left ives fir a snack later that night. - ravExplorerwe did that one year and had chicken in the dutch oven, rolls, stuffing and pie. it was some work- do you have any pie irons- those are always fun.
what ever you decide have a happy Thanksgiving!! - Old-BiscuitExplorer IIIIt's only 2 of us and we are doing the whole turkey thang.....
12# turkey, cranberry/orange sauce, dressing, deviled eggs, mashed taters, gravy, pie, chipped beef logs (cream cheese rolled over chopped beef), olives, celery, carrot sticks for snacking.
And we're dong it all in our RV oven.
Just cause there is only two doesn't mean no Thanksgiving Feast.
Course you can also have a PBJ and a cold glass of milk.
Any restaurant close by? They'll put on a turkey dinner if open.
Or grocery store deli......turkey beast. Have it cut thick, real thick and have turkey breast, stove top dressing, baked yams or sweet potato.
You can pick up the whole dinner right in deli. - Desert_CaptainExplorer IIIMy favorite way to do turkey is in the pressure cooker (takes about 55 minutes, a little longer at higher elevations). I buy a 4 to 5# breast (most folks want the breast meat anyway), and then accompany it with traditional stuffing and mashed potatoes and gravy. The entire meal takes one hour to prep and cook and feed 4 to 6 easily. Have a smaller crowd? Just get a smaller breast, a 3 pounder will feed two and still provide leftovers.
By pressure cooking you are assured of the most moist, juicy, tender turkey you ever tasted. :B - Super_DaveExplorerBarefoot Contessa just had a show on doing 2 cornish game hens stuffed for a dinner for 2 on Thanksgiving.

- Tom_NExplorerIf my mother was alive she would suggest a capon.
My wife would do a turkey breast.
Since we're home in PA my wife has a fresh turkey ordered from the local turkey farm.
We leave for 4 months in FL Black Friday.
Here's a thought. Maybe someone here from NM will invite you for Thanksgiving dinner. That would be a nice gesture.
-Tom - punomaticExplorerHere you go. I can't help it, I like 'em.:o
