Tip for Super Dave
I enjoy reading your 'smoking' posts. Might I suggest, if you haven't already tried it- Next time you have the smoker going-try smoking your own salts and herbs. I've done it with kosher salt and Tellicherry peppercorns. I just put them in an aluminum pie plate and shake them every few minutes. It doesn't take very long, maybe 15 minutes. Then, I put them in a mill to use them. Interesting flavor!
